Foodie Friday: Beetroot cake

#foodiefriday This is my version of Sophie Thomson's Beetroot cake. I halved the sugar, and used GF flour. The beetroot makes the cake super moist and its a bit chocolate fudgey. The pops of purple from the beetroot made the batter an amazing colour. This will be an occasional fun treat for my kids recesses, made ready for school next week (hooray we made it!) 😀
