Food Prep whenever you can. If I have an hour at home, tray bake some vegetables such as these gorgeous mini sweet potatoes and cauliflower florets. Toss in a splash of olive oil, cracked pepper and cumin. Bake at 180 degrees for 45-50min. Once cooled, they freeze really well so can be portioned up for quick lunches, or chopped up ready for an express frittata mid week. Job done 😀

#foodiefriday Whenever you do a traditional roast, always try to cook an extra tray of baked Vege and extra steamed greens. After a crazy day at clinic (like today!) this gets defrosted and eaten with any turkey rissoles I have in the freezer too or the vegetables get chopped up and turned into a quick frittata. Forward plan your food prep 👍
